Is it rainbow trout? That's my favourite!!
Lots of butter and fresh herbs...in the oven or pan-fried. Sooo good with a tomato, cucumber and avocado salad on the side.

We like to "batter" it in cornmeal and pan fry! Especially good if you can get your hands on some bacon grease and fry it up in that!

Butter and Cavendars seasoning on the grill! Squeeze some lemon on at the end.

@yoursilverlining: I second this! So yummy, we tweak it a little bit by adding lots of garlic salt to the cornmeal.

@Sammyfab: yes!! Yum! What kind of herbs do you use? Do you just bake it with pats of butter and herbs?

@Crystal: It's my favorite for fish! I worked at a fishing boat dealership in college and we sold it at the counter because everyone uses it around here.

I don't have the recipe, but at a restaurant recently I had trout mousse on scallops- OMG it was so good!

I don't think my grocery store carries it (California), but amazon has it!

@Crystal: yes, just pats of butter. The more the better! And any herb works - parsley, dill, thyme...I think the only one I would avoid is rosemary.

@Crystal: I'm in Florida and I think grizz is Arkansas. So southern? I just know it's a favorite amongst sport fishermen in these parts.
