So I've found myself slipping into a vegetarian kick lately. I'm making a meal plan for the next month or so, and am trying to make the bulk of the meals vegetarian. D's in complete support (and E is boycotting meat right now anyway). I have a few staples that I turn to a lot, but I'm looking to add more to my rotation. It's hard, because I don't care for the texture of tofu, and I'm really really picky about seafood (no shellfish, usually just salmon and tilapia).
Do you have any meatless meals (I'm still fine with eggs and dairy) that you'd like to share?
