I use oats in muffins a lot. You can also use them in place of bread crumbs in meatloaf or meatballs. Or put them in a food processor with dates and a nut butter, blend till it sticks together and make energy balls out of it.

If we're ever making any kind of bars these are my go to! Not super healthy, but they do use up the quick oats!

Topping for fruit crisp!
Flour + oats + butter + brown sugar + spices, mixed together with a pastry cutter, fork, or fingers.

This is going to sound kind of weird, but I put them in smoothies to make it a little more filling. You just blend up the uncooked oats first so they turn powdery, then add the other ingredients. I like this recipe (and I also add cinnamon to it): http://www.ambitiouskitchen.com/2013/02/vegan-almond-butter-banana-oat-smoothie/

As a topping on pie (or a fruit crisp!)... or make some oatmeal chocolate chip cookies, yum!

Can you do nuts? We take any chocolate chip oatmeal cookie recipe and modify it thusly:
Swap half the butter for peanut butter
Decrease the sugar by 1/3-1/2
Add a cup of sliced almonds
Swap mini chocolate chips for regular and decrease amount
They're so good. I mean still a cookie, but a little protein and fiber. They're a great nursing snack.

Also, you can grind them into flour and sub for up to 50% of wheat flour in baking recipes.

@travellingbee:
Yay! So glad you liked them. A friend shared that recipe with me several years ago. I love easy snacks! I got some oats last night and plan to make some today.
