I heard a radio ad for Disney cruises, something DH and I look forward to doing with DS soon, probably before going to actual DW. I'm thinking maybe in the next year or two (DS turns 2 next month!)

I would go as soon as they are old enough to be in the kids club (2-3ish and diaper trained usually).
If you're looking for him to really enjoy the disney cruise, I would say closer to 4, so that he can use the pools etc and remember the experience.

We are taking LO on a Holland America cruise in December, she will be 2.5
We don't want to go on a Disney cruise until she's over 3 because that's (I believe?) the youngest age for the activities and the kid's club. The kid's club looks like so much fun, so I want her to be old enough to take part in it. We might take a Disney cruise next winter.
