With all the cookies and other Christmas goodies I am making, I don't really feel like cooking normal food too. But my family has to eat something other than sugar!

We had pizza last night
Today it’s beef stew I had frozen. I don’t want to cook either! Just going to make some potatoes and broccoli.
Tomorrow it’s lasagna I prepped and froze a while back. I love having freezer meals this time of year! Make a salad and you’re done.
Earlier in the week we had tacos with black beans - one of our favorite easy meals! We also like hummus with pita, veg, etc, maybe some cold meat or cheese as an easy meal.

Tonight I’m copying the “black and bleu” salad I love from a local restaurant (basically greens, heavily seasoned steak, goat cheese because DH doesn’t like blue, craisins, walnuts, tomatoes), and well have sweet potato fries. The kids will eat the steak and fries and I’ll make them broccoli.
Later in the week because I’ll actually be home to cook (I usually get home too late but took most of the week off):
Corn Chowder and Cream Biscuits
Salmon, Sweet Potatoes, and some kind of veggie
Cauliflower Cakes and Salad

Pizza last night. DH and I are having a date night tonight so I’ll probably just make the kids Mac and cheese. Tomorrow pasta and Sunday I’m having my family over and I’m doing a taco bar, just because it’s easy and so different from all of the traditional holiday food that we’re having the rest of the week.

Fortunately we are going to my dad's house this weekend so I don't have to cook! But this week we had a lot Asian food. I'm part Filipino so stuff like that is a go-to for me, but mostly I wanted something to balance out all of the richness and sweetness in the Christmas foods. Monday we are going to have beef stew!

This week I made mac'n'cheese, soup, and pulled curry out of the freezer. I'll make another soup this week (and then DH and I eat it for lunch all week), but still need one more meal (with leftovers) to make it between Pizza tonight and Christmas dinner on Wednesday.
@becky: corn chowder sounds good! Maybe that will be my soup for the week too.

I specifically saved a discount on a meal kit box for this week so that I could cut down on my time in the kitchen between returning from vacation and Christmas. So, that knocks out three dinners I won't have to plan or shop or prep for
We'll also be having kale salad with salmon and zuppa toscana to fill the other two days before xmas eve. Then we'll have 'snowman' pizzas (naan bread pizzas decorated like snowmen) on xmas eve, and a roast pork tenderloin with brussel sprouts and potato gratin on christmas day.
After christmas I'm planning for cottage pie (like shepherd's pie, but with sausage, a tomato-base for the sauce, and sweet potato on top), and fancied up ramen using some leftover pork from christmas dinner, a soft-boiled egg, scallions, and kale (from the big bag used for the salads and the zuppa earlier in the week).

We made pizza tonight using store bought dough with salad and carrots for the kids. Tomorrow I’m going to make falafel (my kids will prob just eat pita, cukes and I’ll prob warm up meatballs for them...again). Sunday pasta e fagioli and Monday enchiladas. I’m also going to make carrot and cauliflower soup at some point prob to have around for lunches since we’ll be home!
Now I just have to nail down our Xmas eve and Xmas dinner menus...

Pizza tonight too! Tomorrow slow cooker pork tenderloin and sweet potatoes, cheese ravioli with sliced sausage, leftovers from those then it’s Christmas Eve!

This week we’ve had Thai red curry, cheese omelettes and bacon, sausages, and some spaghetti with bolognese sauce that I had frozen. We always get takeout on Friday so tonight we had Panera. Tomorrow we’re supposed to go to a friends’ house for fondue and our families Christmas. Sunday I have no idea - everything left in the fridge?

I had planned on shrimp fajitas, pork tenderloin, and turkey meatballs but when my husband got sick on Monday all plans changed ☹️
Hopefully he’ll be better by Christmas Eve

My in laws arrived tonight for the week so my meal planning is in full force...
Sat: hamburger sliders
Sun: homemade pizzas (we got a breville pizza oven and it makes the best pizzas on earth)
Mon: Taco bar
Tues: Meatpies and seafood chowder at my parents for Christmas Eve
Weds: Christmas brunch at our place, Christmas dinner at my parents
Thurs: Boxing Day party at my aunts
Fri: my dads birthday, so dinner again at my parents
I’m exhausted just thinking about it !!!

We’re having tacos, mini homemade pizzas and pancakes/eggs etc this weekend. We are at the ILs the 23rd and 24th and then my parents’ house for dinner on the 25th. Korean beef bowls and skinnytaste sweet potato turkey chili are planned for the end of the week.

Thanks for the ideas! I decided to make a sheet pan dinner tonight with keilbasa and various veggies.
Sunday: Potato and Corn chowder
Monday: leftovers
Tuesday: Chinese takeout (this is our Christmas Eve tradition. I am almost always playing for a Christmas Eve service so it makes it easy to eat and run)
Wed: Just make pie and foccacia bread and bring home leftovers from in-laws.
Thursday: leftovers and prep for a long drive
The rest of the weekend is travel.
