We're building our 'forever home' and can put in whatever kind of cooktop we want (there will be separate double wall ovens). DH and I both despise electric, so we are planning on a gas cooktop. Then, my mom started pushing for us to get induction -- apparently her good friend has it and is obsessed. So now I'm waffling....
If you could pick anything, what would you choose? Why?
If you have experience with both gas and induction, which to you prefer, and why?

We choose induction in our old house when we remodeled and I LOVED it. Our new house has gas and I'm not a fan, I'd switch in a heartbeat if I could. Btw, we got Bosch appliances and they were great.

GAS. I need that hot flame!!!! I would rather do a electric stove top than induction !

We went gas when designing our dream kitchen. We picked thermador appliances and picked a 6 burner stovetop with a built in griddle pan that can be swapped out for a grill pan. I wanted a built in grill (rather than just a grill pan but that was only offered with a few high end brands and outside our budget).

We are also building and going with induction. I need the flat surface, I hate cleaning the gas cook tops! And if it isn't spotless, it looks terrible. With induction you get the fast cooking, no hot surface is safer for kids, and a quick wipe down to clean up!

I love my induction hob. It can heat a pan of water in seconds, is easy to control and easy to clean.

I have no experience with gas but have an induction stove. Pros: boils water so fast. So so fast. (Cons: it will make boiling water on a regular stove feel like it takes fooooreveeeer!). Easy to clean. Heats up fast and cools down fast. Only heats where the pot is so if it boils over it doesn't cook onto the stove top. Cons: you may have to buy all new pots - if a magnet won't stick to your pots they won't work on an induction stove. They also have to have a base of 5" so if you have a set, the smallest pot and pan might not work.

This thread is making me happy because we have an electric stove and dont have the option of gas. So if we can get induction when we redo the kitchen that sounds lovely!

I have 4 gas burners and one induction. It's all built in gaggenau. I LOOOOVE the induction top. I boil water for pasta/steaming veggies/etc in less than 2 mins, maybe even a minute. I honestly can't even remember what it's like to wait for water to boil.
But I also like nonstick pans so I tend to do cooking outside of boiling water on the gas burners with nonstick pans. So that would be my major con for induction.

I love gas, though I can see the appeal of induction. I was going to mention what @erinbaderin said though, some pots don't work on induction. I have a friend with an induction stove who realized that they were going to need to start heating up their eyebrow wax pot on the outdoor grill!

I personally don't cook enough that it makes a big difference what kind of range I have, but one thing that I am curious about induction is the cooktop...does it remain hot to the touch or is it cool even while it's cooking? I apologize for not knowing better, lol.

@sweetiepie: we need to talk! Do you have the vario 400 series? I am so intreigued with the idea of having both...I hadn't considered that. I know you need magnetic pots/pans with induction but didn't realize I couldn't use nonstick with it.

@MrsLonghorn: So I'm sure you can get nonstick pans that work on induction. I guess I wasn't very clear. What I meant is that none of the nonstick pans I have (and I have a whole nice set of calphalon I got for my wedding) work on induction and I wouldn't want to have to go buy all new pans if I had induction only.
ETA: but I guess if this is your forever home then that might be a small price to pay. We live in NYC and rent in a condo building. So def not our forever home and why I myself wouldn't want to change all my pans if they had induction only. But that's me and my situation.

@SweetiePie: I thought you were renting in NYC, so I'm shocked and jealous of your kitchen! We had a mini sized oven in ours, and couldn't fit most of my baking stuff inside....
How do you feel about/deal with/childproof the knobs on the front of the counter? It might actually be a dealbreaker for DH.... I know he will worry about them being so easily accessible to DS. (I'm in your FB birth group if you don't recognize my name)

So actually DS has just never really touched the knobs. We just made sure from the beginning we taught that they were off limits and "danger". He just doesn't even bother. We actually had a professional baby proofer come when he was much younger and he told us how to handle it and said it wasn't a big deal if we tackled it properly and he was right.
And yes, it's nice for an NYC kitchen BUT if you saw the rest of the kitchen (size) and my cabinet storage you'd pity me again. Haha. It's beautiful but small and storage is horrendous. And my oven is so small I can only do 1 cookie sheet at a time.

@MrsLonghorn: You definitely can use nonstick pans with induction, just maybe not the ones you already have. I had to buy a new one.

Thank you guys SO much!
DH went from 100% gas, to being totally sold on the Bosh induction cooktop, and we haven't even tested it out yet. I was a little nervous about losing gas (and gaggenau is not in our price range), but then I remembered that we live in Texas so I can use our gas grill year-round.
We're getting to have our own mini-cooking class at the store to test out induction, since we've never used it before, but I can't imagine not liking it. Thank you all!!!
