Tonight it's maple nut pork loins w spinach risotto & Asian greens.
Monday: meatloaf sandwiches w sauté asparagus
Tuesday: leftovers
Wednesday: chicken Cesar salad
Thursday & Friday: 2 night pasta night (chicken, imitation crab meat & broccoli )
We're trying to eat out of the fridge / freezer and only buy what's on sale for sides and stock up the freezer.

Tonight: crock pot salsa chicken on tortillas with Mexican blend cheese. Then will eat as leftovers for several nights.
Later this week: breaded boneless chicken thighs baked in the oven and steamed Brussels sprouts. And then a couple more dinners after that, too.

Tonight, I made braised coconut chickpeas and spinach and put it over baked sweet potatoes. It was so, so delicious.

Tomorrow morning I'll stick some pork tenderloin in the slow cooker with some diced tomatoes, cumin, and other spices, and use that as the base for meals for the next few days.
We get the massive pork tenderloin from Costco (the kind that is a double pack of 2 lb tenderloins each), and keep it in the freezer so we can thaw it out over Sunday and have it cook on Monday.

Ooh, everyone has great sounding menus!
I'll do something with chicken, because I have a ton of it in the freezer. Might have a ham one night, and then everything else depends on what's on sale. DH is out for dinner 3 nights this week...so I foresee a lot of scrambled eggs & toast for me.

Tonight is turkey/spinach meatballs with orecchiette pasta and collard greens on the side.
Mon: Catfish, oven-baked french fries & cauliflower
Tues: Lentil cheesy chili over rice
Weds: Leftovers (probably meatball sandwiches & veggies)
That's as far as I got for the week.

Today was quick & easy skillet kielbasa with a salad & apple slices with yogurts honey sauce.
Monday: Mrs. Confetti's bbq quesadillas.
Tuesday: baked potatoes (regular for DH, sweet for me) with black beans & leftover bbq chicken
Wednesday: Chicken parm meatballs
Thursday: steak tacos.

I'm tired. Our weeks are all out of whack because my husband has wednesdays and thursdays off this month.....so i've not been planning ahead, which is costly for us (I can't seem to leave the grocery store without spending 50.00, no matter what.)
But....
Saturday- frittata with beef sausage, broccoli, red pepper, onion, and cheddar, side of asparagus and bread
Sunday- bean, corn & spinach enchiladas
Monday- lentil & sweet potato soup from the freezer.
Going to have to grocery shop tomorrow....

Turkey meatloaf, baked sweet potato, veggies.
Leftover pulled pork sandwiches.
Leftovers or eat out one night, since we're going out of town next weekend starting on Friday.

I am currently addicted to the Sweet Kale Salad in a bag kit. Holy Christ...i've legit had it everyday for 2 weeks, and find myself in Costco every Monday buying a bag. I might have a problem.
It's a nice replacement for a heavy side-dish at dinner, or at lunch with a hardboiled egg and some shredded chicken.
