We had portobello mushroom burgers last night and had a leftover mushroom, so for lunch today I broiled a slice of mozzarella cheese on top of it and then added a tomato slice, pesto mayo and cooked spinach. And potato chips (on the side), lol.
For dinner tonight I'm planning on making sweet potato and black bean enchiladas. My husband requested (challenged) me to cook vegetarian this week.
