Somebody posted on my thread about making beef stew tonight. That sounds so good, and would make your house smell great! I think it would be paleo friendly too. I want to make some to freeze for after LO's arrival.

I made this a few nights ago but it's a really easy chicken thigh braise. Soy sauce (i'm sure you could replace it with tamari), rice wine vinegar, brown sugar, chicken stock, sriracha, garlic and ginger. Add chicken (boneless or bone-in, i took the skin off). Add sliced onions and peppers. I did it all in my Creuset. The only downside is that it tastes good with rice...

I've got a small 2 bone prime rib roast I'll be putting in the oven along with some mini three colour potatoes and I'll steam so snap peas to go with

I made the most amazing Thai beef dish in the crockpot the other day: jar of peanut sauce (or you can make your own...maybe even with a cashews instead of peanuts), can of coconut milk and 2lbs of stewing beef. Cook for 6-8 hours (I cooked for 4.5). You can serve it over rice, vermicelli, cauliflower rice, spaghetti squash, zucchini noodles, etc. We ate it with baby bok choy that I sautéed with garlic and tamari. It was seriously amazing!
