Feeding us is a challenge in these weeks right after having a baby! I pulled out a box of stuffing and will follow some recipe on the back of it with chicken and frozen veg. Man, gourmet!

@Mrs. Tricycle: that's the best! I love it when boxes or containers of food have easy recipes on them. The stuffing and some rice bags are usually great places to get good meal ideas.

Soup and salad night. I made a big vat of lentil soup on Sunday so we're having that. DH is on sandwich duty.

Not sure. Today DH is at home and he usually makes a big lunch (chicken or beef stew) with enough leftover for dinner too. We will have it with rice, plantains and 1/4 avocado each.
Of course if he doesn't make a big lunch, I will probably just warm up some minestrone that I made & froze a while back, with a warm baguette.

@mrs.tricycle: I make that chicken bake whenever I take a meal to new parents, it is easy somewhat healthy and reheats great.
@mrsbrewer: I have the same thing in the crockpot but am going to make it into enchilladas
