We have salads on Thursday's since DH doesn't get home till close to 9 so easy and lite for him. Tonight it will have leftover pork tenderloin.

Jerk chicken wings and grilled veggies
Last night we had fish tacos with mango salsa and Tuesday night we had homemade potstickers with a crunchy cabbage salad.

@Mrs. J: I was stumped one night and I know I'm not a gourmet cook so I really only had what was in the house to make something.
3-4 boneless skinless chicken breast cut into cubes
1 med-large onion.
1-3 cloves of garlic.
1-green pepper.
cook in frying pan till chicken cooked.
add one cup water
and secret ingredient ( old el paso taco seasoning pouch)
cook until water almost evaporated
cook any kind of rice (i use brown)
Add cooked rice
Add one jar old el paso salsa (i use mild)
Add one can corn.
Add black olives
mix together and simmer 5 min.
plate with cheese and sour cream topping.

Leftovers: honey roasted eggplant and bulgur salad with spinach, almonds and goat cheese. And once I stop being lazy I'll make up some Chinese chicken salad for tomorrow.

I think I'll just pan fry some frozen man-doo (Korean dumplings) for dinner and serve with rice and steamed broccoli. Just me and LO tonight

We just did grilled chicken and baked 'tatoes. Pretty boring!
