Nachos, fancy home made mac and cheese, spaghetti with sauce with lots of mushrooms. Stuffed peppers, broccoli cheddar soup.

I make an African Peanut Stew that is super good. I usually make it with chicken and chicken broth, but the original recipe is vegetarian, and I use it when vegetarian friends visit.

@Ash: I stuff them with rice and tomatoes and tomato sauce and topped with shredded cheddar cheese. You can use taco seasoning.

Spaghetti with sauteed garlic and chili pepper flakes.
Spaghetti with brown butter and grated cheese.
Macaroni with sun-dried tomatoes and olives with a zesty Italian or Greek dressing.
Mushroom risotto (although I hardly ever make this).

I make meat free chili and stir fry. Which is pretty much how I'd make regular chili and stir fry but I leave out the meat.
Budget bytes has a lot of really good vegetarian recipes.

I make a pasta dish with sauteed spinach, cherry tomatoes in a lemon-garlic-olive oil (and a dash of butter) "sauce". And for when it's not Lent - add some grilled chicken or shrimp on top!

Veggie stir fry. We sometimes add tofu. We make a fair number of veggie casseroles too.
Oh and I feel like soups are such a traditional Lenten meal. You've got to do some soups!
When we were growing up it was all fish sticks and tater tots!

I like sauteing some veggies (mushrooms/spinach/brussel sprouts/etc.) and serving that over some quick cook polenta with Parmesan cheese and a fried egg.
