The Barefoot Contessa (aka Ina Garten) has this amazing soy sauce broccoli recipe. We seriously eat it every week now. Just google "Ina Garten soy sauce broccoli." Mmmmmmm!

Lemon Pepper Chicken with any veggie sides. Super simple and easy! Just flavor with Lemon Pepper, bake, add butter or water to keep moist!

What kind of chicken are you making? If you want to go simple, you could just do rice or quinoa with veggies, any kind of veggies will do. Steamed, roasted, however you like to prepare them. Baked potatoes or sweet potatoes would also work.
I liked tossing asparagus with a bit of olive oil, balsamic vinegar, salt, and pepper, and roasting it in the oven at 425 for about 10 to 12 minutes. That would also work with broccoli, or summer squash/zucchini.

If you have all of these ingredients, this is easy and delicious. DH doesn't use any yogurt so that's not necessary.

I like to make cranberry russian chicken - it's a 4 ingredient dish, but might not be convenient for you if you don't have the ingredients on hand.
- 1 packet lipton onion soup mix
- 8 oz. russian or catalina dressing
- 1 can cranberries
- 8 boneless, skinless chicken breasts or thighs
1) preheat oven to 350 degrees.
2) mix the first 3 ingredients together
3) put chicken on baking sheet and pour the mixture over it
4) bake (uncovered) for 35 min for thighs and 45 min for breasts.

Our "go to" chicken dinner is always stir fry with white rice. We also love making grilled chicken fajitas/tacos.

chicken phillies! just need some onions, bell peppers, mushrooms, provolone cheese and hoagie rolls.
stir fry the chicken and veggies together, toast the rolls and add veggies and cheese!

I'm going to be making a simple ratatouille type veggie tonight - chop zucchini, eggplant, mushrooms, bell peppers and onions into chunks, sautee in a little olive oil with a big (28oz) can of tomatoes and some dried herbs (rosemary, oregano), and voila, easy ratatouille!
DH makes great faux roast chicken to go with - cubes of chicken breast, sautee on the stove top in olive oil with dried rosemary, oregano, maybe a little thyme, parsley, then add some chicken stock and let the stock reduce a little (@apis: I don't think I forgot any steps there?), and it really smells and tastes like roasted chicken!

My go-to chicken as a separate protein dish is usually garlic or lemon chicken (sometimes piccata, sometimes not), quinoa, brown rice or polenta and roasted asparagus.
