My recent blood work has confirmed that my PCOS is a bit out of control, so we've had to revamp our diet around here. I find I do best when I limit grains, dairy, and sugar. But we like a pumpkin treat now and again!

Here's what I've been making lately:
*purple sweet potatoes, pan-fried in coconut oil with a bit of cinnamon-yummy!
*roasted delicata squash
*olive-oil fried eggs on top of anything
*chicken soup with carrots and spinach
*TJ's Chili Lime Chicken Burgers and Salmon Burgers
*steamed spinach with lemon or balsamic to finish
*avocado, spaghetti sauce, or salsa on top of the aforementioned deliciousness
