I make this yummy chicken where you cut up breasts into thirds and then dip the pieces in buttermilk and then dredge them in a mixutre of bisquick, cajun seasoning, and pecans, then bake. Not the healthiest but so yummy!
I also love to roast chicken in my slow cooker. I cut up baking potatoes and rub them with tomato paste and put them in the bottom of the slow cooker. Then I put a whole chicken on top, sprinkle garlic, salt, and rosemary on it, then pour a little olive oil and lemon juice over everything and cook it all day on low. YUM!

We do chicken quesadillas (either traditional or a BBQ version) with a salad a couple times a month. I find that poaching more breasts than I need helps bring down prep by a ton. I can use the chicken 3 days in a row for a curry dish, chicken salad, fijitas, soup ect. Or a rotisserie chicken is always easy meat prep!

My go-to chicken recipes are lemon chicken (breast), chicken piccata (breast), crispy baked garlic chicken (thigh), deviled chicken (thigh or breast), and enchiladas (shredded).

This is kind of weird but I was craving chicken divan (so retro!) but wanted to make a non-canned soup version and I found this one from America's Test Kitchen:

It's a bit more effort than your average dinner (I did a bunch of prep the night before to cut down time) but it was SO FREAKING GOOD. I hate boneless-skinless chicken breast and this seriously converted me. It's a bit heavy though so not a normal rotation dish, but you asked for a favorite!

Our favorite in our house is:
dip chicken in egg whites and coat in a mixtures of:
crushed cornflakes
1/3 cup graded parmesen cheese
1/2 packet of ranch dressing mix
bake at 350 for 30 minutes or so. last 5 minutes broil so the top gets crispy!

I also love chicken crock pot tacos from Skinny Mom. You throw in 3 breasts (frozen is fine), a 16 oz jar of salsa, a packet of taco seasoning (or make your own taco seasoning), and cook on low for 6-8 hours. Then add whatever taco fixings you like!

@sslm: I love that recipe! I haven't made it for some time, though.... we made it for guests and they didn't like it, so it kind of turned me off!
My easy standby is pesto chicken. You basically just put chicken breasts in a glass pan, cover with jarred (or fresh, but we always use jarred) pesto and then sprinkle generously with shredded mozzarella cheese, and bake. When its nearly done I add grated parmesan and broil for a few minutes. Serve it with nearly anything - pasta, rice, veggies, crusty bread, mashed potatoes... yum!

Beer in the butt chicken!
I just rub my chicken in olive oil and Montreal Chicken Spice. My beer of choice is Kozel. So easy and SO GOOD.

@sslm: I think they don't like spicy / "ethnic" food, which was hilarious because they have a food blog! And I specifically asked them what level of spicy they like, and they said "2 out of 5," and I totally kept it more at like a 1! I take things personally though so I think that's why I stopped making it.

Balsamic bacon-apple chicken!
Cut your chicken breasts lengthwise. Season with salt, pepper and thyme. Layer thinly sliced apples on top and drizzle with balsamic vinegar. Wrap with bacon slices. Bake for 20 minutes at 350F (I think). yUM!!!

@Andrea: That's what most of my cooking is, I really can't do much more than pop things in the oven during the week.
I really like "dump" chicken. Sounds weird, but there are a ton of variations on this. You just portion out your chicken and put it in a bag or pan with the add ons. Google "dump chicken" or "dump cooking."
It's too bad it's so unfortunately named, lol.
