What about a baked brie?
A Brie wheel covered in cranberry sauce, brown sugar, and walnuts, covered with puff pastry and baked til everything is crispy and delicious and bubbly.
Serve with crackers!

another twist on the brie:
phyllo cups with a dab of pepper jello and a cube of brie. Bake for 8 min. NOM NOM NOM.
I'm doing apps Mon night and i'm doing a cheese ball with snackies like salami, pickles, etc, and jalapeno poppers

Depending on the caliber of your party, buffalo chicken cream cheese dip is my old standby. Cheese ball is nice too.

Stuffed Dates. This one is soooo easy and always a hit. Take pre-pitted dates, cut them in half, and stuff with garlic & herb cream cheese. You can then put a small walnut on top for crunch, or sprinkle with some chopped bacon, or just leave plain. These are ALWAYS a hit when I bring them, and people think they are so fancy, but they aren't hard to make at all!

Buffalo chicken dip
Just follow the recipe on the bottle of Franks red hot sauce.... you can boil and shred chicken or just used canned or short cuts chicken

i just put some butter and brown sugar on top, bake it and serve it with frozen fruit heated up and crackers. i love it with peach slices or strawberries. yuuuuuuuuuum.
i also make a spinach dip that is so easy and people go crazy for. it's literally just shredded cheese (i like to use a spicy one), cream cheese, frozen chopped spinach, garlic, and chili pepper flakes. i bake it and serve it with tortilla chips or crackers... so easy and so delish!

@Leialou: Always a hit are bacon wrapped/brown sugar little smokies. If it's the type of crowd to enjoy it, caprese salad is also a hit.

I always make bacon wrapped jalapeño poppers to take to parties. They are delicious and very easy.
DH's favorite appetizer that I make is pizza dip. Spread a block of cream cheese in the bottom of a pie dish, pour a jar of pizza sauce in a layer over the cream cheese, add layer of shredded mozzarella cheese, and sprinkle chopped or mini pepperonis on top. Bake until melted and bubbly. We usually serve it with Tostitos Scoops or pita chips.

I love cranberry salsa over cream cheese with wheat thins or jalapeño poppers- jalapeños halved and seeded, filled with cream cheese, wrapped in bacon and baked till crispy. SO GOOD!

I made homemade cheese balls for my wedding and they turned out awesome.
One brick cream cheese or Nufensdfkjstall (however you spell it), room temp
Half cup or so of blue cheese (whatever feels right)
Half cup or so of craisins
OR
One brick C.C., room temp
Half cup+ of shredded sharp cheddar
2 tbsp.-ish of whole grain mustard
Mix the three ingredients, then refridgerate. When it firms up, mold it into a ball (surprisingly easy!), and roll it in chopped nuts (walnuts/almonds/anything).
Ta-da! Serve with bagel chips or crackers.
