We have a set of Wusthof's that we've accumulated over the past 6 years or so. Largely due to Overstock deals, Macy's clearance and wedding gifts.
LOVE Wusthof and swear by them. Not a fan of JA Henckels.

I need new knives terribly. Our are crap, but it's one of those things I can't make myself buy a new set of for some reason. I'll be interested to hear some replies, though.

@BananaPancakes: Wusthof! I got our starter set from Overstock.com then slowly added to it through clearance deals.
Most people swear by Wusthof, JA Henckels or Global. I've used all three and love Wusthof the best; it holds the edge the longest. We were gifted a set of Henckels years ago and our good friends use Global.

I like Wusthof a lot. But my favorite knife I have is actually made by Victorinox who makes the Swiss Army Knives

I've had Henckels for 5 years and they show no signs of wear. I really like them. I get them sharpened every year and they are as good as new.

I have a Wusthof, but I really want this: http://www.amazon.com/Onion-Shun-DM0500-8-Inch-Chefs/dp/B0007IR2MO/ref=pd_sim_k_2 Sigh. $200 for a knife makes it a really hard purchase to justify, so I am afraid I will just have to drool until the kids are in college.

Love our Shun knives!!! Once you have good knives, it's impossible to go back! We got a block set with our wedding registry completion discount almost 5 years ago and I try to add a knife here and there when I can. I have only 2 slots in the block left! Just got compliment on how well they cut last night from BIL. Now he wants some!

I have a Fante's knife. They're made at the same place and have a very similar quality to Wusthof. Sort of like a store brand. I also have a Shun knife, which I love but the one I have is really a bit big for me.

I wanted Shun but we received a set of JA Henckels as an off registry wedding gift. I like them so far!

We are slowly Wusthof, but in the meantime, we have Kuhn Rikon ceramic knives. They're inexpensive and surprisingly wonderful. We love them!

My chef husband loves Wusthof. And some Asian brand that doesn't have a name on it just some symbol, and I can't remember the name. He uses those for his work but our at-home "nicer" knives are Kitchenaid and they're great - he uses them often. We also have a professional sharpener too, though.

Cutco! Love them. They are the knives I grew up on and my mom's set are still just as amazing 30+ years later.

@MamaMoose: we love our victorinox knives!! they are the cooks illustrated recommendation, so that's why i bought the set of them & i couldn't be happier with them (or the price tag!) =)

We use globals. I know people complain that they're too light but I like them.
