Pasta al forno, taco casserole, chicken parm, buffalo chicken/chicken Caesar wraps/salad. These get boring but they're quick, easy and can get two meals out of most.

This thread is giving me so many ideas, although, I should probably get a crockpot at some point.
Now that the weather is cooling down:
Braised white beans with sausages
Roasted broccoli often, DS will eat it willingly
Home made chicken noodle soup
Zucchini pancakes
Quinoa pancakes with a veggie
Turkey meatballs with roasted tomatoes
Spaghetti and meatballs
Spinach and veggie lasagne
Tacos/wraps
Baked spinach with a grain like spelt or kamut or quinoa
For fast: pesto pasta with peas

Glad I found this thread, it's giving me lots of great ideas! I much prefer one-pot meals when I can get away with it. I love making curries (with rice and naan from Trader Joes), pasta dishes, salads, turkey chili, or some kind of baked salmon. I like to plan a menu each week so I'm always hunting on Pinterest for new options.

I really, really appreciate how attainable most of these ideas are for a WOHM household with a toddler who starts the meltdown process about a minute after we get home. And the honesty from everyone admitting to chicken nuggets, etc. is awesome. I so often feel like I have to justify or make excuses for feeding C "easy" meals that aren't homemade.
In rotation at our house now (admittedly not much):
Chili
Rotisserie chicken
Tortellini with some sort of sauce
Scrambled eggs
Hot dogs (C was on a meat strike for the longest time and this was the ONLY form of meat she would eat.)
Tacos
Tuna sandwiches
Tomato soup and grilled sandwiches
