The other day I made Skinnytaste slow cooker lemon feta chicken drumsticks and they were delicious.
Tomorrow I am making meatloaf in the crockpot. Sorry I don't have a recipe because it's in one of my cook books that are at home. I've never made it before but I'm hoping it turns out good.

(I love butternut squash and this changed my life because they're so hard to cut raw)
Pot roast is also a big favorite of mine - chuck roast, potatoes, carrots, and a little beef stock, and thyme and bam!
Also if you're not aware, crockpot liners are the best invention.

Do you have a Trader Joes? I just discovered their Cabernet pot roast.... yuuum! You do have to brown the outside, but then just toss it in with a little broth, an onion, a couple potatoes and carrots. BIG hit. And way easier than browning all the little pieces for stew

@hellobeeboston: I definitely understand the plastic fear! The other thing I've done lately for messy stuff is to line the crockpot bottom with aluminum foil. Mine gets really hot so it's a huge pain to clean off the stuck on bits at the bottom.

@hellobeeboston: Nope, mine were skinless. I actually ended up shredding the chicken a tiny bit and serving it with the sauce and carrots over rice.

@mrsjd: Aren't they? We tried them when I was on bed rest so DH had less to clean, but I don't think I'll ever stop using them!!!

@JennyG: Life saving, changing, affirming, it can't be overstated. I heart them. I HATE cleaning a crockpot - the whole point of crockpot cooking is that its supposed to be easy. I don't have a dishwasher in our rental right now, so anything to save clean up is a must for me!
