How about grilling something? You can leave on the grill, and then go back to get it when its done.
Or, take out.

Last night it was hot as hell here so I grilled some Coho salmon with a little pesto on top, along with grilled summer squash, onions, peppers and asparagus (veggies we had on hand) and made a pesto quinoa with cherry tomatoes and mozzarella. Only thing I cooked inside was the quinoa. Quick and easy dinner, and there was enough for lunches today.

Last night we grilled some chicken and tossed it with some corn, black beans, lettuce and a chipotle dressing. Kept the heat outside!

My favourite "it's too hot to cook" meal is this: chop and clean a head of green leaf lettuce and put a big pile on each plate, top with chopped tomato, red onion, avocado, and shaved deli turkey, drizzle with olive oil and balsamic, and then top the whole thing with shaved parmesan. No heat required.

Nothing.
Haha - we BBQ usually, so we don't heat up the house. Also a big fan of huge salads (buy a rotisserie chicken at the grocery store for protein). If its crazy hot and neither of us feel like going out or BBQing, we'll just order in.

On these nights -- club sandwiches, grilled chicken/hamburgers/hot dogs, or just straight up sandwiches and fruit/veggies.

Nothing! When it's super hot I pick up a rotisserie chicken from the store, make a huge salad, and top it with the chicken. No turning the oven on!!

Chicken salad wraps. Chop up some rotisserie chicken, toss with chopped celery, almonds, red grapes (KEY!), mayo, mustard, and pickles/pickle relish. Throw on lettuce wraps, tortillas, bread, crackers. Throw in a side of fresh fruit, a glass of chilled white wine, easy peasy.

@erinbaderin: @plantains: It's easy because you can stock up on crackers, wine, marcona almonds and olives, then just grab a couple meats and cheeses, plus some grapes at the grocery each week and have a nice spread. Plus you feel fancy as shit.
