I semi accidentally procured myself 30 lbs of bulk fresh bacon. It's in 2 15 lb boxes. I don't have a food storage thing that I can suck the air out to properly store it. I'm just putting six slices in a ziplock bag and sqeezing the air out the best I can. But I figure that will last for about six week frozen, does that sound right?
I'm planning on making a huge batch of bacon wrapped meatballs for Christmas Eve. And obviously eating a bunch in the next month and giving some away. Please share your favorite bacon recipes extra points if it can be made in bulk and frozen.
