I made the Alton Brown turkey recipe this year, and it turned out nicely! The recipe really is foolproof... even a cooking novice like me was able to make a delicious turkey.
I'd like to roast a chicken for Christmas dinner, but was wondering if there's an equally delicious and foolproof recipe out there that you could recommend?

For something that's pretty easy yet completely delicious:
Melt butter and mix with poultry seasoning, rosemary, thyme, salt, pepper, fennel, and pour over top of the chicken.
(for bonus flavour, make the same mix but with the butter just soft, not melted, and put under the skin of the chicken)
Quarter a lemon, add 3-4 garlic cloves (smashed but not chopped), season with salt and pepper. Stuff inside the chicken.
Place in a baking tray with a chopped onion, potatoes, carrots, parsnips and bake at 425 for approx 1.5 hours.

Yes -this is foolproof, we do it all the time and it's always delicious and easy. This is a crispy skin chicken, unlike a lot of "softer" roasted chicken recipes.
The key is using a smallish chicken (no more than 4 lbs.) and dry brining for 24-48 hours. All you have to do is rub chicken with salt/pepper and let it sit in the fridge to brine.
When ready, heat oven to 475 and heat a cast iron skillet (or other hot oven and stove friendly dish), *pat dry* the chicken (key to crispy skin). Pop chicken into the skillet and into the oven and cook for 20 minutes, flip chicken over, cook for 25 minutes, flip chicken again, cook for 5 more minutes. Let chicken rest for 10-15 minutes before carving. ALWAYS crispy skin and super juicy meat.

I like to have my chicken done on the rotisserie, not ideal if you're not wanting to get another appliance, but I also love the chicken from Costco, lol.
