I thinking we are having leftovers... which might be challenging without a microwave... I'll just have to bake and stove top it. Or maybe I'll say f-it and get some take out. Haha.
What are you having for dinner?

@Raindrop: leftovers.
Rotisserie chicken, sautéed mushrooms, edemame and jasmine rice.
Steaming the rice and edemame and heating up the chicken and 'shrooms in the oven.

Probably spaghetti. The girls and I have had to eat out the last 2 nights due to DH's stomach bug, so we have to eat in tonight!

Shrimp sauteed with whatever veggies we have in the fridge.

We've been making do with leftovers of one kind or another all week. At this point I have turkey kofta or salmon croquettes I froze last weekend for DH that can be served with leftover rice pilaf and a green salad. I did manage to make a banana pudding pie, so there IS dessert to be had.
I think DS' dinner is going to be some leftover fried rice, corn, fruit, and milk.
I'm hugely pregnant so my appetite is all over the place lately so I don't really plan for my meals all that much.

If DH gets home early enough to help me cut open the spaghetti squash I'll make spaghetti squash lasagna. If not, chicken pot pie.
GOLD / wonderful coconut / 33402 posts
@Mrs. Pickle: can you send me that recipe? Also have you tried putting it in the microwave for 5 mins? Makes it easier to cut.
Leftover/fed for yourself night. LO is having our leftovers from last night. We eat after she is asleep. DH won't eat at 6.

@Raindrop: Hmm, no real recipe. The pulled pork was from a few weeks ago...slow cooker, and I froze the leftovers. Pretty standard mac and cheese recipe....sharp cheddar cheese sauce. Mix the pulled pork in, put it in a baking dish and cook it for 20 min or so. The waffles are super easy, I just make the cornbread batter on the back of the cornmeal bag (I can't remember the brand I use, but it's yellow?), and make them in a waffle iron

@Mrs. Pickle: Yes please share your spaghetti squash lasagna recipe! Pretty please?

@lovehoneybee: Oh okay, Thanks for the run down though! Yeah I'm totally drooling over here. Sounds Yummers! Corn bread waffles sound divine.

@lovehoneybee: OMG that sounds so good!
we are going out. Our favorite fancy/gourmet spot features a burger only like 2 weeks a year and it's a local thing to get in and order a burger. It's primo primo beef topped with shredded romaine, Stilton cheese, and creamy garlic dressing on a house made brioche bun. Insanely good, served with house made chips that are thin as paper and perfect.

@yoursilverlining: OMG that sounds soooo good! Can you take a picture of it and post it here? Pretty please with a cherry on top!

I'm going to try and make shakshouka for the first time! I had it once when I was in Israel and it blew my mind.
From wikipedia in case anyone doesn't know what it is:
Shakshouka or shakshuka is a dish of eggs poached in a sauce of tomatoes, chili peppers, and onions, often spiced with cumin. It is believed to have a Tunisian origin.

I have no idea.... DH didn't help me meal plan this week, so I refused to do it alone on principle. Lol! It's bitten me in the ass however, because now we have nothing to eat for dinner! I'm going to be diggin in the freezer for something, I guess. Very fancy!

@DillonLion: Wow that sounds good, are you going to follow a recipe?

Probably turkey tacos...although I had a stomach ache for 2 days so I haven't really been eating. We'll see if that sounds appetizing when the time comes.

@Smurfette: I haven't tried that! I will tonight.
@Smurfette: @Raindrop: it's a Fresh 20 recipe. It's one of the few that DH and I loved and still make regularly.

Italian Zesty marinated chicken breast and pineapple. I'm sure I'll have a second dinner.
wonderful pea / 17279 posts
@Raindrop: super simple- marinate sliced chicken breast in Ken's Steakhouse Zesty Italian dressing. Bake in oven for 30 half hour on 400, keep the chicken in the middle rack. The pineapples weren't anything fancy, just fresh chunks I sliced and ate a piece with every bite of chicken.

Chicken quesadillas. Just finished them and realized I forgot to make the rice! Woops.

Well it was supposed to be BBQ sandwiches but the buns got moldy so now its just BBQ meat with sides (potatoes, zucchini fries, apple slices).

Curry w/veggies and rice.
@yerpie110: Jealous!
@ValentineMommy: Oh man, I feel you on DH not helping meal plan!
This past month we did a meal plan for the whole month together (just repeating same 10 or so meals) and it has worked out SO well and I loved thinking about it once and being done. Of course we didn't follow it exactly but I just moved meals around as necessary.
