    We had rotisserie chicken, mashed potatoes(for DH and I)/Mac and cheese(for the kids) and cucumbers.

    DH had pbjs and I had a turkey sandwich. LO had half a pbj and yogurt. Not very exciting!

    @Raindrop: no recipe! Just a liquid bourbon marinade and then cut a pocket in a chicken breast and stuff with spinach, mozzarella, Parmesan and cream cheese. Roll in panko and pan fry both sides until brown and finish in 400 oven for 25 minutes!

    @Raindrop: I will say that I am pregnant with our first so no kids yet I feel like I won't have this kind of time to make more complicated meals in the near future lol

    We had lemon dill salmon and brown rice with thyme. Super easy after I spent 10 hours on my feet at work!

    @Ms. RV: this was my third time making it. We really like it. This time I was careful to undercooked the potatoes a little so they didn't get mushy. It was excellent. DH loves it and he isn't even a big sausage fan. Such a nice sweet sauce. Yum! Leftovers for lunch!

    We had balsamic braised chicken and onions over rice and broccoli. I made no bake cookies for dessert because my husband is taking tomorrow off and I knew the kids would get a kick out of celebrating an extra day with daddy.

    DS ended up rejecting my dinner choice. He's sick so I indulged him by feeding him cold cereal in the backyard. DH ate his turkey kofta wrap. I wasn't hungry at dinner time but just made myself a massive pancake breakfast at 8pm! Buttermilk pancakes with strawberries and whipped cream, scrambled eggs, and turkey sausage. Mmmm.
