We had this chicken recipe. I BBQ'd the chicken and then just topped it with the spinach/tomatoes/mozza and then broiled it. When it came out of the oven, we topped it with balsamic glaze.
Pounding out chicken is my least favorite thing ever, plus I think it looks better with the stuff on top.

We just had it with steamed broccoli. I had plans to make a big kale something salad with it.... but someone has been obsessed with kale chips covered in hot sauce... so there was none left
