Stir fry - which for me means throw all the leftover veggies from the week with whatever sauces/spices are around. Sometimes it's delicious, sometimes it's OK, surprisingly it isn't usually a disaster

We're going out for Mexican! YAY! I cannot stomach the idea of cooking and the only thing that sounds good right now are tacos. I can't wait!

@banana: I do! At first DH was a little iffy about it (not too adventurous when it comes to new foods) but we both LOVE it. It really pulls together the whole thing.

@mrskc: Seriouslyyy. I could eat it every night. Luckily DH doesn't have a problem with that! We had tacos last night too....but at least I made them at home and I don't think they count as mexican (buffalo chicken!).

@andrea: Ok. I'm totally gonna look into slow cookers. Never knew what they were for before (like what the benefits were). My family never used one when I was growing up so I was never around them much. Gonna do some research now!

We had meatloaf with a brown sugar/ketchup glaze (is this a normal thing? It's the only recipe I've ever even bothered to look at...), red potatoes mashed with buttermilk and freshly grated parmesan cheese, and a spinach salad (spinach, dried cranberries, diced apples, toasted walnuts and feta cheese with a balsamic honey vinaigrette).
I'm so happy the First Trimester Coma has ended and my appetite has returned.

I got my dinner from pinterest- super easy. I made crescent rolls with turkey and cheese in them and tator tots. Dinner was ready from prep to eating in 15 minutes.

Same thing as everyday: quinoa with carrots and broccoli with a side of pineapple and blueberries.
This week is exciting because I got to add kidney beans into the mix! Yumm. I've just been mixing everything together because I mine as well when it's only a few things.

I had an evening presentation at work tonight, so I put beef stroganoff in the crockpot. Sooooooo good!

Before work I put two frozen pork steaks in the crock pot and covered them with cream of chicken soup. When we got home, Hubs made some rice and I whisked flour into the soup bits (after removing the meat) to make a gravy. We had rice topped with pork steak and gravy. I'll admit that I was lazy and didn't add a veggie, but it's easy to toss broccoli into this right before it's done.

The day before last, I cooked a Filipino dish called "Paksiw" for the first time. I was supposed to use banana blossoms but used lily blossoms instead. It turned out really well! I sauteed pork with garlic, soy sauce, black pepper, then added brown sugar, vinegar and the lily blossoms in the end.
Last night, I experimented some more and used a forgotten leek in the fridge and what was leftover of bamboo shoots I had stored. It was a coconut milk soup with fish, ginger, garlic, leeks, tomato, and shrimp paste. It wasn't great, but edible. I know where I went wrong (I needed a bolder flavor fish), use onion instead of leeks, and use a salty shrimp paste instead of the sweet one I had. DH will have a few frozen lunchboxes. Hehe.
