I'm jealous of all your meals! Mine was supposed to chili in the slow cooker, but the cleaning people seem to have unplugged it while I was at work! Now I'm trying to decide if it will be safe to eat once I cook AND I had to make something else.
But like @JoJoGirl: it's spaghetti squash now. With chicken sausage from Trader Joe's. -

southwest chicken chowder - its yum and a crockpot recipe. here's the recipe if anyone wants it!
can of rotel undrained, can of corn undrained, can of black beans (drained & rinsed), 2 frozen chicken breasts, 8 oz cream cheese chopped in cubes, 1 packet dry ranch dressing, 1 tablespoon cumin, 1 teaspoon onion powder, 1 teaspoon chili powder. Put all ingredients in crock pot and cook 6-8 hours. Shred chicken, whisk in melted cream cheese until smooth and stir chicken back in -enjoy!
