It's so beautiful outside today, but it looks like I am staying late at work, so hubby is sticking to our meal plan.
I wish I could go home early and we could grill out tonight!

I have Weight Watchers shredded chicken tacos in the crockpot for DH, I'm going out for appetizers and drinks for a friend's birthday so i may or may not get to try it out (new recipe!)

Enchiladas! Well, sorta. I couldn't figure out how to roll the corn tortillas without breaking them, so I just kind of layered everything. Still can't wait for them!

Take out! We've been eating freezer meals and meals dropped off by friends since LO was born, so I am so tired of pasta and carbs! I told DH I just want a to-go salad from somewhere.

@FarmWifeGina: I put a little bit of oil in a pan, throw a tortilla in once it's heated, flip for 2 seconds, pick it up with a spatula, put another tortilla on and set the first one down on top of it. After 2-3 seconds I pick up both and put another underneath, and repeat. Makes them delicious and pliable, but does add extra oil. I know a lot of people that just microwave them for a few seconds to soften them. But layered is great too!

Just picked up some veggies from the farmers market by my work (so nice to pop down there during lunch!). I'll pull a piece of meat out of the freezer, grill up some veggies and do a salad out of our garden. Love summer grilling!

We've been on a health kick lately so we really wanna have an indulgence meal tonight. Decided to make spicy beef fajita in the crock pot - I did use a lean cut of meat though since I knew it'd be cooking all day (top round). Hopefully it won't be tough to death!

@FarmWifeGina: If you have a cast iron skillet, put it on low/medium and let the tortillas warm up in there for a bit on each side, don't need to add oil or anything to the pan. You can also steam them in the microwave. We have a comal for heating tortillas, but I think a cast iron skillet or a griddle would work just as well.
We're having BBQ chicken on the grill and Caesar salad with homemade dressing.

Today was pizza night. So, that means we also followed it up with Ben and Jerry's. So, yes I ate a whole small pizza and a pint of ice cream.
Funny thing is that I had baked potatoes, green beans, and pork chops ready to cook when DH said we were ordering out!

The veal cutlets I just grilled, plus the mixed sautéed vegetables left over from when I cooked them last night, plus the leftover rice that DW cooked last night... so, overall, it's also known as a feast!
We're getting back into cooking properly at home, and it's so much fun, and we feel so much better. Delivery food is nice, sure, but nothing beats a home-cooked dinner.
