BBQ chicken, i made it yesterday in the crockpot even though i wasn't going to be home last night because the chicken needed to get cooked, i'll just throw 'em under the broiler for a few tonight.

Grilled chicken salad. I had a heavier lunch that work provided. Plus this way I can make DH one for lunch tomorrow since his flight gets in late tonight.

@locavore_mama: I had lobster last night, it was disappointing, but maybe that's a good excuse to have it again! there are some great sales on them this wk, I paid $4.98/lb! On second thought, maybe I'll go for a walk & get one for lunch, they'll steam them for you so I wouldn't even have to boil any water. Yes! Lobster for lunch! Thank you for the idea!

I have made a lot of meatloaf recipes for the family and this was the kids' favorite by far.
ETA: I sautée an onion instead of using the dry minced onion because we don't keep that on hand.

I've been obsessed with the quinoa lately, so I'm putting together a quinoa "salad" that I've adapted from a few different recipes: quinoa, sweet peas (might add a little bit of edamame), walnuts, dill, basil and pancetta tossed in a dressing comprised of olive oil, lemon juice, and dijon mustard. I season with a little bit of sea salt/pepper/garlic powder/etc. Made it Sunday for the first time, and I haven't been able to stop thinking about it.

Hmmm....that's a good question. Meat has been a no-go for me lately so I'm thinking carbs and veggies. I don't know what yet though. This looks awesome and like I could handle eating it:

Grilled hot links and the best roasted veggies with baguette (i add baby portobello mushrooms and jalapeños and it's almost like a grilled veggie salsa...sooo good on top of piece of bread)
