Looking for some inspiration! I'm vegetarian, so I usually have to modify meals, but I'm in a bit of a rut so it doesn't hurt to ask!

We are having veggie curry over quinoa tonight. I've also planned for enchiladas, burgers, and pasta with spinach and mushrooms, but I'm not sure which days I'll do them on (usually depends on our leftovers situation!).

I hate meal planning, but it really does make things easier when life gets crazy during the week. What do you have planned?
