I need some creative inspiration. I don't want to make baked ziti...I've been making that way too much lately. But, I have ground beef thawed, and unless I can come up with something, I'm making hamburgers.

Meatloaf. I made it in a cupcake tin so I froze single (baby) serve portions.

I made tacos last night. What about meatloaf? Or a skillet dish, similar to Hamburger Helper but using your own igredients? Stuffed peppers?

I made cheeseburger fried rice!
Basically ground meat with sauteed onions and mushrooms. Then I make a sauce with (and yes this sounds nutty) soy sauce, ketchup, bbq sauce, and a little mustard. Top with really tiny diced pickle, diced tomato and cheese. Serve over rice.
It's probably my husband's favorite thing I make.

@lindseykaye: That sounds good! I have all that except mushrooms, but I don't like them anyways, so maybe I'll try that.

Hmm, I think I made taco pie last. Other ideas: meatballs + pasta, burgers, tater tot casserole

@Dandelion: Mushrooms are totally optional! I like to have some veg in there with the meat so if you have something else on hand that you like go for it! I've put in peppers before, and zucchini (even though I wouldn't put zucchini on a burger).

Spinach rice! It's quick, easy, and tasty.
1 small onion, finely chopped
1 lb ground beef
3/4 cup white rice
1 1/2 cups water
2-3 tablespoons tomato paste (I always keep a tube in the fridge and just give it a couple good squeezes)
1 bag of fresh baby spinach or 3/4 bag of frozen spinach
1 clove garlic, minced (optional)
Salt and pepper
Sauté the onion in a bit of oil in a large skillet or sauté pan.. When it softens, add the beef and cook until its browned. If there's a lot of grease, drain it off. Add the rice, water, and tomato paste (and garlic, if using). Stir well and bring to a boil. Add spinach, cover, turn down the heat to low, and cook until the rice is tender, about 20 minutes. Stir to incorporate spinach, add salt and pepper to taste, and serve!

I'm making them tonight-green chili turkey burgers! They are SO GOOD
2 (4 oz.) cans diced green chiles
1 pound ground turkey
1 cup cilantro, finely chopped
½ cup onion, finely chopped
2 teaspoons cumin
1 teaspoon chili powder
1 teaspoon celtic sea salt
Mix. Form into burgers and grill

Tonight's dinner was stir-fried ground beef with oyster mushrooms, peas, chopped kale, water chestnuts, in oyster sauce.
Other ingredients included: ginger powder, onion powder, garlic powder, chili flakes, chicken bouillon, a few drops of Maggi, black pepper. I usually serve it over rice or rice noodles, but I was too tired, so we ate it with lettuce (wraps). It would have been good with glass noodles mixed in for a fuller wrap.

We eat this recipe called A Thinner Mexican Dinner all the time. It's soooooo good! It's like a taco salad or deconstructed tacos.

@lindseykaye: We tried it and liked it! I went a tad crazy with the BBQ sauce, but I'm sure I'll remember for next time to take it easy. Is it a Rachel Ray recipe? Just wondering, cause it has all the qualities of one of her recipes. If not, you should submit it to her!
@Sapphiresun: Taco salad sounds good...I haven't had it in years!
@Ash: I like stuffed peppers, but my MIL loves them, and when we lived with my inlaws for a few months, she made them way too much! Maybe once it gets out of my system, I'll make them, though.
