I think my most impressive, well-received meals are (sorry, can't choose one):

-Black bean and spinach enchiladas with a pumpkin (or sweet potato) cream sauce (sometimes with chicken, sometimes not)
-Asparagus lasagna with an herbed olive oil bechamel sauce.
-Tilapia fish cakes and roasted asparagus with a brown butter, soy and balsamic drizzle. It doesn't look so impressive but people go crazy for it.

My most impressive is probably stuffed roast pheasant. It is something I trot out for holiday meals. My favorites are probably rosemary garlic roasted potatoes, salmon with a mustard sauce, and spoonbread. I just ate a whole heck-ton of spoon bread in the last few days thanks to people posting asking what to do with squash. Thank you to those nice people!

I'm with @NaturallyCathy mine are mostly desserts, chocolate chip cookies (as simple as they are) I can perfect!
