I bought the skinny taste buffalo shrimp dip and used greek yogurt instead of sour cream and then added a can of drained crab meat to make it meatier and it was tasty!!!

I like the old stand by taco dip- layer of cream cheese mixed with taco seasoning, layer of refried beans, layer of salsa, then for cold- chopped lettuce, chopped tomato, shredded cheese, maybe chopped avocado or guac in there; for hot just the layer of cheese and put it in the oven until it's melty and delicious. It's not gourmet but it's a crowd pleaser.
I also love buffalo chicken dip and haven't had it in ages!

I LOVE Alton's Brown french onion dip. It is a classic and tastes so fresh and tangy compared to store-bought.
ETA: Brownies are always a good because they are easy to eat and less messy than most desserts. I like pecans and caramel in mine to make them turtle.

@mrs. wagon: It's nothing fancy and it takes a while to get really good, browned, caramelized onions (which I have to make extra because I will eat them by the spoonful) but I think it's worth it. You also have to make it a day before to let the flavors meld.

My favorite is this corn and olive dip. It is a HUGE hit every time I make it. I messed up the first time I made it and used blck olives instead of green. After making it probably 15 times, I finally realized the recipe calls for green. I keep making it with black, though, because everyone loves it that way! We're guacamole people. A good homemade guacamole and tortilla chips - nothing better! I make mine with avocados, lime juice, jalapenos, tomatoes and red onion.

Pizza dip is really easy and my friends went crazy over it.
In glass pie or casserole dish spread 1 8oz package of cream cheese on the bottom. Layer pizza sauce and mozzarella cheese over the cream cheese. Add pepperoni to the top and bake until melted and bubbly. I either chop the pepperoni slices up or use the mini pepperoni because it makes the dip easier to eat. Serve with Tostitos Scoops or pita chips.
I usually ask if I can borrow the host's oven for a few minutes because it is best when it is served hot.

Pepperoni Dip! The easiest thing in the world to make and everyone loses their mind when I bring it.
2 bags of pepperoni - cut up into quarters (or for the lazy, like myself, just use them whole).
Two bricks of cream cheese
Two cans of condensed cream of celery soup (trust me on that).
Throw all ingredients into a crockpot on low for 4 hours. Stir from time to time. Done when heated through and dip has an orange tint from the pepperoni! Serve with any kind of carb. Bread, crackers, pretzels, chips.. whatever!
