My mom is funny, she's really picky about what forms go with what sauce.

@sandy yes. The lemon helps cut the bitterness of the arugula. If you don't want to do an egg, you could also do a sprinkle of cheese because the fat helps mellow the bitterness too

He really hates it when I eat it when I'm pregnant. haha I snuck it once when I was pregnant with #1! haha he gave me the stink eye. And alas no ramen places in my city.
