Last time I hosted a dinner I made asparagus lasagna, based off of this NYT recipe, alongside a spinach salad with dried cranberries, walnuts, gorgonzola cheese and a balsamic honey vinaigrette.
For dessert I had made dark chocolate brownies.

Totally depends on what the other couples like to eat and if there is any theme or not. Could be anything from grilled streaks and salmon steaks with roasted/grilled veggies and pesto pasta to a risotto and pork chops, a few different Chinese dishes, or a couple of courses - something like wild mushroom soup, a salad and a main of roast beef and cheesy polenta cakes. So, totally depends!

Usually a pasta dish, lasagna or Alfredo, add a Caesar salad and French bread and it's done!

Last night we did this ( while 3 kids were running around): Short ribs, a baby greens salad with craisins, pine nuts, goat cheese tossed with homemade balsamic and French bread. For dessert I bake Phyllo cups and fill with chopped strawberries with a bit of sugar and whipped cream. I do simple apps of salami, cheese, olives, hummus and crudités. I love meals that all the prep is done before!

I like to make butternut squash risotto and have a salad and some chocolate dessert :).

Depending on what the other couples like I usually make broiled black tiger prawns with garlic, parsley and butter. And either serve with pasta or crusty bread. If someone is not a seafood fan I do spicy roasted chicken legs.
I made this recipe for valentine's day and I'm obsessed so I will probably make it for our next gathering. Asian inspired flank steak lettuce wraps.

DH's thing lately is making rib roast, grilled asparagus and like a pasta dish.

@sandy: No real recipe, but what I do is slash the meat on both sides, then season with black pepper.
I use either whole, fresh spinach leaves or frozen chopped spinach that has been thawed and squeezed "dry." I then press it into the meat, with about 2 ounces of crumbled feta cheese. Then I tie it and roast it in a hot oven, usually 400 degrees. I often cut it and then roast it some more, because I can't find my meat thermometer at the moment.
Then I make a gravy with the pan juices, using chicken stock.

Usually steak (ribeye) with chimichurri sauce, grilled squash, sweet potatoes and zucchini, sliced asiago cheese bread, and lots of wine

Taco/fajita bar! Either make chicken or pork in the crockpot or grill up some marinated chicken breasts and skirt steak and set out with all of the fixings with some rice and beans. Chips, salsa and guac for apps. And if you're feeling crazy, you can whip up some margaritas!

We like to have "theme night" dinner parties and try to stay within a category. My husband makes sushi rolls (and sashimi) himself and we sometimes do a Japanese night. Another hit was a New Orleans night
My other go-to for a casual dinner get-together is a simple spinach lasagna with a homemade garlic bread.
