I don't think he really counts, but I always liked Shang from Mulan.
I guess of the "real" princes it's got to be Eric.

I was in love with Eric as a girl, but that also may be because I wanted to be Ariel.
The beast was really cute, though (as a beast trying to woo Belle).

We are watching Tangled this morning, I totally forgot about my other favorite "prince"- Flynn Rider/Eugene. The more I see this movie, the more I love it!
