I definitely wouldn't travel with travel cribs, especially since you will be traveling around, and European hotels tend to have smaller sized rooms. I would probably ask for the rollaway bed for the older LO and cosleep with the baby. If you do an airbnb, ask if they can provide a crib. I've found airbnb hosts to be pretty accommodating and able to provide a pack n play when we've needed one.

@Banana330: I'm not really sure what a manor house is (I'm thinking it's more like a hotel than a private residence?). But if they are used to hosting events, surely they've had to accommodate children before. I would call or email them and see what, if anything, they have. Maybe they at least have a pack n play?

@Banana330: what does the bnb suggest for sleeping your LO1? We have often put our LOs in the stroller bassinets when traveling, so that might be an option for LO2.

What about an inflatable toddler sized air mattress, like The Shrunks for the older child and a pack and play for the baby? I've travelled with a very basic pack and play in my suitcase, in my checked bag. It's not ideal, but it can be done.

Some areas have baby equipment rentals. If you are flying, maybe the area you are flying into would have this? I looked into this one once (https://babysaway.com/) and there was another local business that offered the same service. We ended up getting a crib at the hotel but this might be an option if the hotel doesn't have that as an option.
