Kid-friendly, I'd do a stuffed shells recipe. Or some kind of layered mexican lasagna with beans.

@looch: sounds amazing to me, but both kids hate potatoes (I didn't even know that was possible!).
@skipper2010: I wasn't thinking and made veggie lasagne last night, which we will likely have as leftovers tonight. The dinner is tomorrow night.

If you do fajitas, just make sure to cook the meat seperately. They also make veggie "steak strips". They are in the freezer section.
They also make veggie sliders and chicken patties.

I'm a vegetarian and my go to meal when people pop by is minestrone soup, salad, and a pasta dish. Either fettuccine alfredo or sometimes mushroom ravioli.
Almost everyone likes it so it's pretty safe. I personally prefer more interesting, ethnic foods, but a lot of people don't so I usually don't make them for first time guests.

Cauliflower "steaks"--basically thick slices of cauliflower that are roasted, or grilled. Really filling and delicious! I will make myself one if we are grilling sometimes
