A sell by date isn't the same as an expiration date anyways!

My DH used to be like that but now he is much better. He won't trust his own senses though, he is always taking stuff to me to smell/check.
Even if the bread was mouldy, I'd just cut the mould off. If it was stale I would either freshen it up in the oven or cook with it.

Considering I don't even go by the use by dates most of the time I would certainly eat it if it didn't have mold or other signs of it being bad lol

I come from a household where my mother made the most of everything and was very conscious about not being wasteful.
My husband thinks my mother is cheap and has thrown out lots of good food on me.
I told him last night that I took a poll and only 5 out of 140 people would have thrown it out

I'm extremely picky with sell by and expiration dates, but for something like bread I go by look and feel. If it's not stale or moldy it's fine! I'm more nervous about dairy, meats, etc.
And agree with @blackbird: I also put more weight behind an expiration date vs sell by/best by. Sell/best by are just when the store has to take it off shelves. Doesn't mean it's bad.

for me, bread is all on the look and feel, if it has no mold and isn't hard we eat it.

If it isn't moldy, I would stick it in the freezer and use slices when I need to make breadcrumbs.
