I just get a pork butt, cover it in onion powder, Montreal seasoning, and add 2-3 bay leaves and 1 tablespoon of Worchestershire sauce per pound of meat. Then I let it go until it's falling apart (like overnight). This is my all purpose pulled pork that I use for everything. I usually don't need more spice for my pork but you can add some garlic and oregano to the juices and toss the meat with it. For a crispier texture, I sometimes broil the meat with some juices for a few minutes until the edges are crisped and brown. The other half of the meat I freeze or mix with more juices and BBQ for great pulled pork.

@gingerbebe: I like this version, I overcomplicate it, I think.
I sear a pork butt/shoulder, then I place it over sliced onions in the slow cooker (mine has an insert that I can put right on the stovetop to sear). Then I pour in orange juice, lemon juice and lime juice until it's halfway up the side of the piece of meat. Then I let it cook for about six hours on high, until it shreds with a fork.
