I've got summer on the brain! What are your favorite summer meal ideas? I'm itching to start grilling several times a week again, it's just too cold to do it in the winter here.

We grill at least 4x a week in the summer: beer butt chicken, steaks, hamburgers, porkchops, sweet chili chicken skewers, even just hot dogs/polish dogs.
I also make up roasted veggies and we loved grilled pineapple and peaches for a treat!
If it's super hot I'll even just swing by the grocery store and pick up a rotisserie chicken and make a quick cold pasta salad and throw it all together and have a cold pasta dish for dinner!
As you can tell I'm excited too We've had a couple nice days and it's just a tease for it to be here!

Pasta salads!
I love grilling but we live in a small city space, so, no grill. But I grill every night at the beach house.
I love corn on the cob - LO does too.. can't wait for summer.

Tomatoes, tomatoes for me in the summer, I will only eat them in season locally.
I am not a huge fan of grilled foods, lol, but I do like fish steamed in a foil packet cooked outside.

Anything with watermelon in it! I love a watermelon salad. And watermelon margaritas lol

We still grill all winter. Just clear a path in the snow to the grill and fire that baby up!
I try to make the most of all the fresh summer veggies, and at as much of them as I can in their prime.
Lots of caprese salads, lots of veggie-heavy dinners. Radish with feta is an awesome combo which we eat a lot – either as a side, or in a salad. Lots of interesting salads, grilled summer squash, zucchini, eggplant, etc. We do a lot of cold quinoa salads too, paired with BBQ meat.

Local corn on the cob, watermelon, peaches and smoked foods! It gets too cold here to keep the smoker at a stable temp in the winter months.

I can't wait to grill! And just eat outside. I also love hot dogs and never, ever eat them so a few hot summer nights that include hot dogs will be awesome!

DS and I are fruit bats so we go nuts over alllll the delicious fruit. Berries, figs from our tree, cherries, stone fruit, melons galore, mmmm. I also love sweet local bicolor corn and cucumbers that seemingly grow overnight in our garden.
We love Mediterranean food, so we like making homemade beef kofta or chicken kabobs with rice pilaf and a fresh tomato/cuke/mint salad with stuff from the garden or farmer's market.
We also love making a pasta dish with chicken sausage, baby zuchinni, and roasted little tomatoes with a ton of fresh basil on top. We can make it off-season, but its just not the same without the sweet in-season San Marzanos and tiny baby zukes!
DS and DH both like sausages, so I'm sure we'll have a fair number of sausage-centric meals too.

We live in a fruit, veggie and seafood mecca, so we're totally spoiled, in the summertime.
Since we become beach bums come June, we like to make portable food for picnic dinners. Hearty sandwiches (tri tip, bahn mi, crab salad, grilled veggies and fresh mozzarella) are great for that.
We make a delicious pizza on the grill with goats cheese, leeks and strawberries, drizzled in balsamic.
Salads become main courses, and pretty much anything can become a taco or a skewer.
It's also prime season for beer, and our favorite brewery stocks their seasonal wheat and olallieberry cream. Best part.

BBQ pork tenderloin or shrimp w grilled veggies and grilled ciabatta bread!
For the pork, I just marinate in a combo of Soy, Brown Sugar, Dijon and Honey!
For the Shrimp - just salt and pepper bc we dip in cocktail sauce.
Our veggies are usually mushrooms, squash (zuc or summer), Onions, asparagus. Seasoned with olive oil, lowrys salt and garlic powder.
Ciabatta just gets some olive oil, garlic salt. And sometimes we do corn instead which gets oil, lowrys and garlic powder.

We had bacon cheddar cheeseburgers, hot dogs and corn on the cob Saturday. Sooo good.

We like to make tomato/basil pizza! It's so easy and it uses up the basil and cherry tomatoes from the garden. It's just not the same with store bought tomatoes in the winter
