I made this soup last night and it was pretty good...fattening and spicy! I forgot to buy heavy cream but it tasted ok without it! I didn't add any salt because the sausage and bacon had enough flavor. I will definitely add this recipe to my soup rotation.

I watched a Barefoot Contessa and HAD to try this eggplant pasta. It was SO GOOD. We get so much eggplant from our CSA and now I want to make it every week.

Ooh hope to get some good inspiration from this thread!
We tried the Cooks Country (America's Test Kitchen) Meatloaf with Mushroom Gravy last night. http://onedadskitchen.com/tag/cooks-country-meatloaf-with-mushroom-gravy/
It was a little salty so I would reduce the salt. The kids loved it. My DH said it was weird because we're used to meatloaf with a ketchupy sauce on top. It kind of reminded us of Salisbury steak. But it was still a winner.

I'm on a pumpkin kick right now so I made a batch of these:

The recipe makes a lot of cookies so I ended up freezing some. Not sure how those will turn out. And I didn't end up using the whole can of pumpkin puree so I froze the remaining portion. I added pumpkin pie spice and upped the amount of spices added. There isn't a strong pumpkin flavor but they are moist and yummy. I also kept a few chocolate chips aside to plop onto the tops of the dough balls before baking as she suggest in the recipe which makes the cookies look nice.

@mrs. wagon: I am jealous of your CSA boxes. I keep piling up cauliflower and cabbage...now THOSE are gas inducing. 
The last recipe i used was from a friend and her instructions were super simple - seasoned chicken thighs marinated in oyster sauce, touch of soy sauce and lots of garlic. Cook at 375 for 20-25 minutes, then brush with honey and broil until skin gets crispy.

@Freckles: I make something like this but I add honey and sriracha to the mix also, then top it off with sliced onions for the last 15 minutes. It's more of a saucy chicken dish (I call it soy sauce chicken).

I want to start cooking more now that DD is a toddler. For the first 10 months after DD, we had rotisserie chicken every few days and would eat the same things. I really need to branch out and try new recipes.

Crock pot pork chops and mashed veggies. I used boneless pork chops since that's what I had and wasn't diligent about measuring the potatos. I thought it was pretty good but DH wasn't a huge fan of the parsnip flavor.
