Does anyone have an easy yet delicious recipe for arroz con pollo? I've never made the dish before and all of the recipes I've found online seem complicated. I would love to make this Thursday while my hubby is away since he can't handle food with a lot of spices.

I have no idea how to make it, but based on the way it looks I would totally fake it. Boxed yellow rice, rotisserie chicken (store bought) and chunky salsa. It probably wouldn't even taste like the real thing, but the flavors wouldn't be too spicy and three ingredients it couldn't be simpler.
