We'll likely need a larger vehicle for a few road trips coming up.

I would say no smaller than a Full size (something like a Ford Taurus or an Impala) probably since you have 3 adults plus luggage. Need all the room you can get!
FYI - I rented an Impala before and the trunk space is unbelievably deep and large! it was awesome!!

We rented a Hyundai Sonata last month and fit an Evenflo convertible and a Graco infant seat as well as my cousins 6'5" (brawny, not fat, but big) husband in the back seat. The trunk had enough space for an umbrella stroller, full size suitcase, a carry on and some other random bags. We were very happy with it. Gas mileage was really reasonable too.

@oliviaoblivia: Thanks! That sounds perfect. DH who's 6'3 will be driving, my mom will probably sit up front and me in the back between the two kids. One of the trips will be 8hrs so I want to be comfortable! LOL

We rented a fully loaded Ford Explorer last week. It had a 3rd row and was pretty spacious. Not sure about gas mileage, though.
It toted around 5 adults and 1 car seat one of the days. I wasn't there but I don't think there were any complaints.
