I keep getting offers for a free car seat canopy but it doesnt look like something I would use. To be honest I dont really understand the purpose of it, its like a blanket that covers the car seat completely. How would the baby breathe under it?

I used this because I had a winter baby, loved it. Better than the bundle me because it doesn't interfere with the function of the car seat.

I didn't, but my SIL has one. They're really useful during the cold winter/fall/spring months--especially if you have a newborn/infant.
It's good for when the baby's napping in the car good when you're carrying/pushing the baby+carseat places (in a universal stroller) -
I was too cheap to actually buy one, so DH and I threw light blankets over our car seat.

I have a summer baby and we live in Florida. If it's cold we use a blanket.

I had a fall baby and didn't use one. We bought him a fleece suit from Gap that kept him all cozy. He doesn't spend much time in his car seat.

I use one like Looch uses. Baby can breathe, not sure why everyone asks this. I'd prefer that over a blanket...but I'm biased.LOL
