If I can't think of anything to make, I just make Tacos. We have tacos 2-3 times a month. They're my favorite and oh, so easy!

@Rainbow Sprinkles: I always buy the dough that comes refrigerated in the bakery at the grocery store. So easy peasy !

@artbee: I miss making homemade pizza. When we were dating I made it one night for dinner. DH was throwing up a couple hours later with food poisoning from whatever he had for lunch. So he never wants it now, since he associates it with that horrible night.
I make tacos, philly cheese steak sandwiches, quesdillas, grilled chicken salads all the time for easy weeknight meals.

@Smurfette: Maybe you can make calzones and trick him? Pretty much the same thing.... just rolled up!
GOLD / wonderful coconut / 33402 posts
@artbee: I have been making calzones the last couple months and he never says anything about those. So weird. One night I should just make it and he will just have to suck it up and eat the pizza!

@Smurfette: how do you make the Philly cheesesteak sandwiches? I have been craving those lately and I can't find a place around me that sells them besides subway and I don't think those count.

Cornish hen in herb soup with rice. Thankfully it doesn't taste herbally at all and the hubby actually enjoys it! He's a pretty picker eater.

We also make tacos a lot. And pasta. And fajitas. LOL We actually tend to get into food ruts a lot because FI is a picky eater and I am not adventurous in the kitchen, so I tend to stick to what I know he likes.

@MrsHotDog: DH usually is in charge of those. But I think that he just flavors the green peppers and onions with some salt and pepper and cooks them in butter, verses olive oil. Then grills a steak. Slices it up. Toast the bread and top with provolone bread. Super easy. We are having them tonight I can pay more attention tonight for you and update you.

@Coco Bee: what kind of cabbage do you use for stir fry, and how do you make it? I make a "chinese chicken salad" over napa cabbage that we love; would definitely like to make more with napa cabbage!!

Curried chicken and brocolli casserole- DH is in love with it, especially when I make it extra spicy/cheesy for him and asks for me to make every single time we're planning on grocery shopping. Not gonna lie, I love it too!

Yup - tacos! I make pinto or black beans in the pressure cooker at least 1x a month - we eat 1/4, 1/4 stays in the fridge as leftovers and the other half goes in the freezer for the next taco night! We have taco night at least 3x a month too.

Steak. If it's on sale, I'll usually pick up a NY for the hubs and a ribeye for me. It ends up costing under $5 for the two of us.
@JennyLayneAZ: my husband is super picky, too! He'll only eat beef or chicken, no seafood, no non-Italian/non-Mexican/non-American. No cooked veggies/ Kinda limits what I can do and I always feel like I'm in a rut!

@JessicaMcB: Share the recipe please! That sounds so yummy!
Our staples are grilled chicken or steak, along with veggies and rice or potato. The "no plan" go to is always pasta though, but that can get us in trouble.

@chrispygal: But of course- everyone should get to enjoy it's yummy goodness! This is from memory, so let me know if something makes no sense, lol.
Curried Chicken and Brocolli Casserole (Serves 6-8...or my husband)
-1-1.5 lbs chicken thighs
-1 bag frozen brocolli
-1 cup mayonnaise
-1 teaspoon lemon juice
-1 can cream of chicken soup
-1 can cream of brocolli soup
-1 tablespoon of hot curry powder
-1/2 tablespoon of cayenne (optional)
-1 cup of shredded "Old" cheddar
1. Preheat oven to 350. Cut chicken thighs into bite size cubes and fry in a small amount of olive oil with garlic (to your taste) and chili flakes if hotter curry is desired.
2. Boil water and par-cook brocolli florets.
3. Combine mayo, soups, lemon juice, curry powder and cayenne (if desired). Feel free to add more of the spices for a headier curry, keeping in mind a 2:1 ratio.
4. Combine sauce, brocolli and chicken thighs in a casserole dish and cover with shredded cheese.
5. Bake uncovered for 35 minutes and serve over rice.
