We use ours a ton, but more in the winter - like for stews and the like. We have done braised short ribs with it, which was one of my favorites!

I think the thing that really recommends them is that you can move them from the stovetop to the oven (i.e. brown meat on the stove, then cook at a lower heat, long and slow, in the oven). That, and enameled cast iron is gorgeous! I have a great cookbook about braising (Molly Stevens All About Braising)...but have very little practical experience so far.

Double check the knob on your dutch oven. Some of them are plastic, which need to be replaced with a metal knob if you are going to cook at a higher temperature in the oven. (Important to know if you want to make no-knead bread!)

I do stuffed peppers in ours -- hollow out the peppers, nestle them in the pot, fill the peppers and the spaces around them with Spanish rice, bake with the lid on until the peppers are tender and then broil for a few minutes with the lid off to get a nice crispy crust. You can also do a whole chicken ("chicken in a pot"-type recipes). And of course, like others mentioned, soups and stews. Dutch ovens are awesome!

My absolute favorite feature of a Dutch oven is the ability to properly deglaze a pan and use all the yummy stuff that sticks to it. Lol

I have 2 and the each have their purpose. The smaller one is for risotto, fruit and my special chicken dish. The larger one is for soups, stews and sauces. If I had a bigger oven, I would roast chickens in the larger one, but it is huge and my ikea oven is a shoebox.

I have one and I love to slow cook roasts in it. They turn out so much better than in a crockpot.

Thanks everyone! Seems like soups and stews are the way to go, or roasting meat.
@StbHisMrs: So do you do the same thing that you would in the slow cooker?

@abbydabbydoodlebug: What I do is season & brown the roast, then put it in the oven, covered at 225 for about 6-7 hours. If your dutch oven has a "beaded" top then don't add water, the beads re-distribute the water.
