I don't have a recipe handy (it's in my Joy of Cooking cookbook) but I cook red sauce (also known as Sunday Gravy) in my dutch oven. It has the space to sear the meat and then the sheer volume to hold the sauce so it doesn't bubble out of the pot while it simmers all day long.

I use it for everything! Deep frying, curries, soups, stews, etc. But my favorite *fancy* thing to make is probably coq au vin.
