I like to coat them in butter cracker crumbs, brown on the stove and finish in the oven.

Last night I cubed chicken, tossed with lemon juice, garlic, pepper, and herbes de provence, sauteed it, then tossed it with cooked orzo, green beans and mushrooms, and made a quick pan sauce with lemon juice and chicken stock to mix in. So yummy!

I made these sweet & spicy chicken bites earlier this week. We used ranch instead of bleu cheese and made wraps with them but they can be eaten on their own too.

I made this a few weeks ago and it was AWESOME. i used boneless breasts and they took about 30 min in the oven maybe? I baked them on a cookie cooling rack suspended over a regular cookie sheet to catch any crumbs

I like to do a quick marinade of taco seasoning, a cheap beer, and lime juice for 30 minutes on chicken breasts pounded to be even thickness. Then grill or broil. Can be eaten on salads, as fajitas or tacos, or just with some Spanish rice and beans.

Cut chicken into chunks - sautee in a large pan with olive oil, garlic until completely cooked
add about a cup of frozen spinach and any other veggies - broccoli, mushrooms, zucchini
add a jar of your favorite red sauce
serve over pasta - we like tortellini but even penne is great
sprinkle with mozzarella
