I like to use pesto for cold pasta salads, it's different than the traditional American mayo salads...I just use prepared pesto, shredded carrots, shredded zucchini, small mozzarella balls, grape tomatoes and bowtie pasta.
For grain salads, I really like dried fruit and nuts with a vinagrette.

I love, love, love pasta salad. I try not to make it unless it is for potluck because I'll eat the whole thing in a day.
I mix tri-color rotini, broccoli, cauliflower, cubed cheddar and mozarella cheese, olives and Italian dressing.

For a kid-friendly option, I've been making a caprese tortellini salad this summer. Cheese tortellini, grape tomatoes, mozzarella balls, basil, prosciutto, and dress with olive oil and balsamic vinegar.

Pesto pasta salad- tri-colored pasta, roasted red peppers, steamed broccoli, black olives, mozzarella balls, artichoke hearts, and pesto.
Lentil salad- I like it with carrots or beets.
Black bean salad- black beans, corn, red bell pepper, tomato, avocado, cumin, lime, olive oil and cilantro.

Another vote for pesto. Squeeze some lemon on to really boost the flavor!
We also eat a lot of quinoa, faro and winterberry salads. Our favorites are:
Italian one: grain base, roasted veggies (eggplant, fennel, carrots, peppers, onions), fresh herbs (I like a mix of parsley, basil and mint), liberal amounts of olive oil and balsamic vinegar.
Southwest: grain base, black beans, jalapenos (can be omitted), roasted corn (optional as well), scallions, cucumber, tomato, avocado, cilantro, olive oil and lime juice.
Greek: grain base, feta cheese, pepperonchino slices, greek olives, red onion, cucumber

my go-to is bow ties or penne or similarly bite-size pasta w cherry tomatoes, basil, parmesean and/or fresh mozzarella, white beans, pine nuts, olive oil, and balsamic vinegar. super simple and delicious!

I love all pasta salad! But my all time favorite is super simple: penne or rotini, pepperoncinis, artichoke hearts, red onion, black olives, salami, mozzarella, and Italian dressing.

I know there was a recipe but I don't use it. Basically, you cook up some orzo and add cut up green peppers, cucumbers and feta/goat cheese. I usually add chicken for some protein as i bring this for lunch a lot. I add a bit of olive oil and lemon juice to taste and season it with a bit of salt and pepper.

My aunt shared the best recipe ever and it's SO EASY.
1 box penne or spirals cooked al dente
As many veggies as you want, i usually do: red or yellow peppers, cucumbers, carrots, celery, grape tomatoes, etc
Pepperoni cut up in quarters
Pimento olives cut in half
Artichoke hearts if you like those
Then mix with PESTO and Ken's Italian Steakhouse dressing to taste.
OMG it's so easy and SO DELICIOUS.

I love quinoa, crumbled feta, halved cherry tomatoes, chickpeas, cucumber, and kalamata olives. Toss with lemon juice, olive oil, salt, and pepper. Can also add mint or parsley. Yum.
